Penaut-Oatmeal-Raisin homemade Larabar recipe!

I always wanted to taste this bars but unfortunatelly they are not available were I live… So I decided to make them at home! And it tastes AMAZING! I’m usually disappointed with the healthy recipes wich don’t cointain a tiny bit of chocolate, because I’m a chocolate lover. So, I was a bit insecure to make them but well I decided to give a chance to this and I make the right decission. I will make this another time, for sure! It tastes really good, like a mixture of sweet and a tiny bit of salty that comes from the penauts. If you want to know how I make this just keep reading!

Ingridients:

-1/2 cup or 80gr raisins

-6 tbsp or 30 gr quick oats

-1/2 cup or 40gr penauts

-A pinch salt

-1/4 tsp pure vanilla extract or 2-3 drops of concentrated vanilla extract

Instructions:

Put first the oats in the mixer and mix them just for 20-30 seconds, then put the other ingridients and mix them. Then make with the dough 3 balls and put them in a baking sheet (you can make more or less balls if you want to). Make the form of a bar, you can be more creative and make funny forms like for exaple a heart. And they are ready to enjoy!

The bars can be in the fridge at least two weeks.

Healthy pancakes recipe!

You know I like to vary! I can’t have the same food all the days because I get bored really easy… When I was in the worst times of my illness I couldn’t change anything of what I ate, but thankfully now this time has gone and now I have to make always something different to eat. Especially for breakfast! And I love pancakes, so I just decided to make them today for breakfast. But this time in a healthy way, and I have to say they taste really good! You can make them withou anything inside, I made them with apple pieces but alone taste really good too or even better! So if you want to know how to make pancakes in a healthy version just keep reading!

Ingridients:

-45gr or 1/3 cup flour

-80gr milk

-2 tbsp or 10gr oats

-1 tsp baking powder

-1/8 tsp salt

-sweetener of your choice (I used 20gr of honey)

-1/2 tsp pure vanilla extract or 2-3 drops of concentrate vanilla extract

Opcional:

-Fruit of your choice (I used Apple, but like I said without taste good to or even better!)

-2 tsp melted virgin coconut oil (You can use veg oil, but coconut oil gives the pancakes an incredible shortbread-y taste. Omit only if you don’t mind the taste of fat-free pancakes).

Introductions:

In a cereal bowl, combine all dry ingredients except the Apple (or fruit of your choice), and stir very well. In a separate bowl, combine all liquid ingredients. (The milk is warmed to prevent the oil from solidifying on contact, this is a good practice for any baked-good recipe that calls for coconut oil). Pour dry into wet, and stir together to form a batter.

Grease a skillet, then turn the heat to medium. Test the heat of your skillet by throwing a few drops of water onto the surface, when the water sizzles, the pan is ready for the pancake batter. Turn skillet to low-medium and drop about 1/4 of the batter into the skillet, then spread out and lightly place the Apple or the furit of your choice in the middle, pushing down just a little. Repeat with another pancake. (Unless you have a giant skillet, it is best to just do two at a time so as not to crowd the skillet.) Flip pancakes over when the edges become firm and they are able to be flipped without breaking. Continue cooking until desired doneness is reached.

Then put the pancakes in a cute plate and put honey on top the pancakes to make them sweeter! You can put what ever you want on top, but I think without anything wont taste that good!

Double chocolate Nescafé brownie recipe!

For the coffee lovers, here is the perfect recipe for a perfect brownie! It combines a light coffee flavour with a noticeable chocolate note, just delicious. So, let’s see the recipe!

Ingredients:

-150gr dark chocolate

-5 bags Double chocolate cappuccino of Nescafé

-200gr butter

-225gr sugar

-3 eggs

-2 bags vanilla sugar or vanilla extract

-150gr walnuts

-150gr flour

-1 1/4 teaspoon baking poder

-75ml milk

-1 pinch of salt

Preparation:

Melt the chocolate and let it cool for 2 min, then in a mixing bowl put the butter, sugar , and 2 tablespoons water. When is mixed put the chocolate and the 3 eggs and mix it another time until is nice and smooth.

In another mixing bowl mix the dry ingredients wich are the flour,the pinch of salt, the baking powder, the vanilla sugar and the 5 bags of the Double chocolate cappuccino, when is mixed mix the dry ingredients with the other dough and add the milk. If you didn’t use the vanilla sugar add now the vanilla extract. When all is good mixed take a rectangular mold and put a baking sheet, then add the dough.

Put the dough at 160 degrees for 25-30 minutes, then let it cool and enjoy!

Clean eating, vegan, raw vegan,raw…Is good for an eating disorder recovery?

More and more people are starting the new diets clean eating, vegan or raw vegan only raw and so so so on. I’m not here to criticize if they are good for our body or not, I’m here to explain you why is not good to be in this diets when you are in an eating disorder recovery.

So let’s started with the easy reason, because this is an other type of a restrictive diet.

Really simple, in this diets you can’t eat what ever you want to! You can’t eat normal candies, you can’t eat for example normal pancakes and so on.

But then this people say, they only crave fruits and veggies (I can’t belive this sentence), well this is maby right but imagine you are in a pijama party, for example, and for breakfast they prepare pancakes, what would you eat in this moment? You can’t ask for vegan, protein whole wheat ones! The only thing you can make is ask for some fruits or veggies and look how your friends are enjoying it, isn’t a bit strange? I think this is really strange to see one of my friends who is having veggies or fruits for breakfast while the others are eating pancakes!

And don’t forget, we have an eating disorder wich made us refuse some types of food that are classified by ”unhealthy”, and this diets make you refuse ”unhealthy” food too so is like maintaining your ed there but in another cool and new way.

It is an easy way to don’t face the fear food.

Then, there are the vegan diets or raw vegan diets too; If you want to be vegan or you’re already one, ask yourself if you’re one because of ethical reasons or just because is a easy way to restrict, but don’t lye yourself and be completely true!

If the answer is for ethical reasons then the best thing would be to wait until you’re fully recovered.

If the answer is because of your ed just stop with it!

The physically part is really important in this topic too, these diets are classified as ”healthy” ones so it will be good if we start it when we have to get healthy anyway, or? Wrong! When we are recovering form an ed we need all the types of food, because we need all the types of nutrients. That means all the types of fat, protein, sugar, carbs and so on…

These diets are lacking in many types of nutrients, and they are way to high in other ones! And this is naturally not good for our malnourished bodies (not matter if you are lightly underweight or even undeweight as long you have restricted your calorie intake to low numbers you need all these nutrients).

So, the conclusion is: Just keep eating all the types of food and enjoy them! You can eat balanced but this is completely a diferent thing!

Vanilla baked oatmeal recipe for one!

The oats are really good for our bodies and they have a lot of benefits for us, that’s because I wanted to start eating them! So, I decided to make me a oat porridge… But, it was just disgusting for me! I kept trying and trying but I couldn’t find any recipe wich tasted good for my tase, so I decided to baked it! And was the best idea! It turns like a spongy cake, and it is yummy and healthy! There is any better way for me to eat oats hahaha, so let’s see the recipe!

Vanilla baked oatmeal:

Ingridients:

-100gr vanilla yogurt

-80 to 100ml milk

-50 gr oats

-1 teespoon bakin powder or bakin soda

-1 egg White

-8gr (one sack) vanilla sugar

-10 gr chocolate chips or ground almonds

Preparation:

Mix all the ingridients in a mixingbowl, you can put the choc chips or almonds in the dough or as a topping. 

Then put the dough in a bowl that can be put in the oven (it can be a cake mold too), but is important that the bowl or mold is not too big for the dough.

Put it in the oven for 180 degrees for 25 minutes then let it cold and enjoy!

My name is Carla and I’m 14 years old! I live right now in Germany but I lived in other countries too! I was born in Spain, Mallorca and then I moved to the península. First in a little town and then to a bigger one. So yes, my life was full of changes! And I don’t think this will be the last one hahah.

This is only a small, small part of my life but you will know more with the time…

For a lot of circumstances I get ill of an eating disorder and depression for many years but now finally I’m recovering!
