Healthy Apple Pie recipe!

Easy, yummy and healthy. Best description to this amazing recipe! I do eat ”normal” cakes, of course. But you know, why not being a bit healthier if you can? This recipe tastes just like a real Apple pie but it’s healthier and easier to make! You don’t need any strange ingredients, so is also pretty possible to make this without going to the supermarket. I just hate to go to the supermarket just for one single ingredient, you too? hahaha. Anyway, let’s start with this amazing recipe!

Ingredients:

For the crust/pastry; (Make this recipe 2 times if you one crust for the bottom and one for the top)

-1 cup all-purpose flour  (140gr)

-1/2 teaspoon salt

-1/4 cup plus 1-2 tbsp. oil of your choice (is better if you use an oil wich doesn’t have a strong flavor) (5-6 tbsp.)

-2 1/2 tablespoons ice water (add more water if is necessary)

For the filling:

-55 g unsalted butter of your choice (1/4 cup)

-25 g all-purpose flour (3 tbsp.)

-60 ml water (1/4 cup)

-110 g packed brown sugar (1/2 cup brown sugar or brown coconut sugar)

-8 Granny Smith apples – peeled, cored and sliced

-1 tsp. cinnamon

Instructions:

For the crust/pastry;

1. In a medium mixing bowl, stir together 1 cup all-purpose flour and 1/2 teaspoon salt.

2. In a glass measuring cup, combine 1/4 cup plus 1-2 tablespoons oil and 2 1/2 tablespoons ice water. Whisk them together until creamy. Immediately pour all at once into flour and toss with a fork. Form into a ball. Dough will be moist. If you want to cover completely the Apple Pie make the crust recipe another time to have one for the bottom and another one for the top.

3.Preheat oven to 425 degrees F (220 degrees C). Melt the butter in a saucepan. Stir in flour to form a paste. Add water and brown sugar and cinnamon, and bring to a boil. Reduce temperature and let simmer.

4.Place the bottom crust in your pan. Fill with apples, mounded slightly.Gently pour the sugar and butter liquid over the apples. Cover with the other crust and make some holes with a knife.

5.Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees F (175 degrees C). Continue baking for 35 to 45 minutes, until apples are soft.

Healthy Coconut Cookies recipe!

Omg godness! If you like coconut this is your recipe! I find really hard to find a healthy coconut cookie recipe, but this one is really good! So let’s start with it;

Ingredients:

-70gr oat flour or withe flour

-a pinch of salt

-2 tbsp. coconut flakes (unsweetened if you want a healthier recipe)

-4 tbsp. brown sugar

-2-3 drops vanilla extract

-1 tbsp. veg oil or coconut oil (for fat-free version use 1 tbsp. applesauce)

-1-3 tbsp. milk (enough milk to make a good consistency

-3/4 tsp. baking powder

Instructions:

In a mixing bowl mix first all the dry ingredients, and then add the wet (excluding the milk). Put enough milk to make a dough, if you put too much milk just add some more flour. In a mold with a baking sheet but about 1 tbsp. of the dough, place each cookie about 5 cm between each cookie. Bake them at 350F° or 170-180 degrees for about 10 minutes. Let them sit for 5-10 min and enjoy!

Best recipe Banana Pancakes! (Healthy and for one)

Do you remember the recipe of the banana-oatmeal pancakes? This is the improved version of them! You have to try them, these are amazing! And they are healthy and just for you. The problem that I had with the other pancakes, was that they are really difficult to flip as they contain any eggs and the consistency is more liquid than these recipe. So of course is better when you make nice round pancakes than pancakes with a strange form! But it’s not only that better, the texture of these pancakes are like the really ones! Really fluffy and spongy. The taste is also really good, and the are also quite good plain! But I prefer always to put some kind of syrup hahaha. So let’s see this amazing recipe!

Ingredients:

~Single serving (about 7 medium-small pancakes)~

-1 ripe banana (important that the banana is ripe, the more ripe the banana is the more sweet it taste!)

-2 eggs

-2 tbsp. flour (30 gr, you can use all the types of flour, but if the flour has some taste I don’t know if  it will taste good)

-some oil (for grease the pan)

Instructions:

Put your pan at high heat, then in a cereal bowl mash the banana (don’t mash it too much, as the consistency has to be more thick than liquid). When the banana is mashed put the 2 eggs and beat until all is well combined. Then add the 2 tbsp. of flour, then stir until there are any lumps. At this point the pan will be warm enough, so low to medium-heat. With a paper towel spread some oil (don’t omit this step if you want to flip your pancakes!). Then put about 2 tbsp. of the dough, make a round form and wait until the other side is golden-brown, then flip and wait until the pancake is also golden-brown in the other side. Put you pancakes in a plate and put some kind of sauce or syrup. In this recipe I recommend to put chocolate sauce as the banana taste really good with chocolate! Enjoy!

Note!

Is really important that after each pancake you grease your pan, sometimes I forgot it to grease my pan and It was really difficult to flip them, so don’t forget to grease your pan after EACH pancake!

Coconut-Banana oatmeal recipe!

Today I woke up with a beautiful view! All full of snow, just amazing! As I’m from Spain I’ve never seen so much snow hahaha. So beautiful! But now let’s go to the recipe; I was a bit unsure about this combination, but the result was just perfect! A creamy oatmeal with coconut flakes and some banana chunks, delicious! So let’s see the recipe;

Ingredients:

-1 ripe banana

-1 cup milk (250 ml)

-1/2 cup oats (40-50 gr)

-1 tbsp. brown sugar or honey

-2-3 drops vanilla extract

-pinch salt

Topping:

-1 tbsp. coconut flakes

-Few slices of the banana

Instructions:

In a small sauce-pan at medium-heat, put the oats and the milk and stir until it starts to thicken, then put the sugar, the vanilla extract and stir well until is all well combined. Then put the banana cut in slices (reserve few slices for the topping). Start to smash the banana and stir well. The banana will start to melt but is faster if you smash it a bit. Stir well until the banana is melted in the oats, then serve in a cereal bowl and top with the banana slices and the tbsp. coconut. Enjoy!

Healthy Banana-Oatmeal Pancakes recipe! (For one)

Today I woke up and the cravings for pancakes were really strong… So I decided to make some! But like always something has to be wrong, I didn’t have eggs and I already puted all the ingredients in the bowl! So I had to improvise and I thought,what kind of ingredient could be as an egg substitute? Bananas! And so is how I invented this amazing recipe! And the good thing also is, that this recipe is only for you! I love single serving recipes, you too? Anyway, let’s see it;

Ingredients:

-30gr oatmeal flour or all-purpose flour

-1 banana (ripe will be always better, if your is green don’t try to make the recipe! Wait until the banana is at least yellow)

-pinch of salt

-2 tbsp. plain yogurt

-2-3 drops vanilla extract

-1 tbsp. honey

-1/4 tsp. baking powder

-Milk (as much you need)

Instructions:

In a cereal bowl mix the dry ingredients and in another one the wet ingridients (excluding the milk). When all the ingredients are good mixed, mix the wet ingredients with the dry ones and put enough milk to have a thick but at the same time liquid consistency. In small pan, first at high heat spread some veg or coconut oil (all the types of oils or butters work well). Then put about 1 or 2 tbsp. of the dough and when start to bubble flip it when the other side is golden brown remove it from the pan and put it in a plate. Now that the pan is warm, lower it to medium-heat. This recipe makes about 4 small pancakes. I prefere to make the a bit small because is easier to flip, as this recipe is a bit sticky I really recomend to make them this way. As a topping I recomed to put some maple syrup, honey or like me some chocolate syrup, delicious. And of course enjoy!

Apple Pie Oatmeal recipe!

I promise, the next post wont be an oatmeal haha.

Sorry for my obsession with oatmeal but I have to share this recipe with you, because if you like apple pie this is the best recipe for you!

Sometimes I just want a pice of cake for breakfast, but I have any cake there… So that’s the reason of this fabulous recipe! The combination of all these ingredients make the perfect oatmeal with… Apple pie flavor! Just one word, perfect. Let’s see how I made it!

Ingredients:

-1/2 cup oats (40-50gr)

-1 cup milk (250ml)

-About a tsp. cinnamon

-1/2 tsp. butter

-1 tbsp. honey (You can use brown sugar as well, about 1-2 tbsp.)

-1 small apple

-Pinch salt

For the topping:

Some extra honey and some extra cinnamon. You can also top with a couple of nuts, like walnuts.

Instructions:

Put in a small saucepan at medium-heat, the milk and the oats. While the oats are cooking, if your apple isn’t sweet at all put it in another small saucepan at high.heat with 1 tsp. sugar and mix good until the apple is a bit brown. When the oats start to thicken, put all the ingredients and stir well. When it has the best consistency for you, remove it from the heat and serve it in a cereal bowl with some extra honey and cinnamon. You can top it also with some nuts. Enjoy!

Helathy Lemon Yogurt Cake recipe!

Just delicious. The texture, the consistency, the flavors… All in this cake is amazing, and so easy! And this is the perfect example that you can also eat healthier without having special ingredients at home, so let’s see the recipe;

Ingredients:

-1 + 1/2 cup whole wheat flour (all-purpose works too or half whole wheat and half all-purpose if you don’t like the whole wheat flavor)

-2 tsp. baking powder

-1/2 tsp. salt

-1 cup plain yogurt (if you want a low-fat version use low-fat Greek yogurt)

-1 cup brown sugar (for sugar-free version use Truvia or Stevia)

-3 large eggs

-zest form 2 lemons

-1/2 tsp. vanilla extract

-1/2 cup melted margarine or vegan butter (for a healthier version use coconut oil or canola oil)

-Powdered sugar

Instructions:

Preheat oven to 350º F or at 180-170 degrees. Spray a 9×5 loaf pan with cooking spray; set aside. Then, combine flour, baking powder and salt in a medium bowl.

In another bowl, combine yogurt, sugar (or the sweetener of your choice), eggs, lemon zest and vanilla extract and stir well to combine, slowly whisk in the flour mixture. Fold in the vegan butter or margarine (or oil of your choice).

Pour into prepared pan and bake for about 50 minutes or until a toothpick comes out clean. When is baked take it our from the oven and powder with some powder sugar, then let it cool. Cut one big slice and enjoy!

Carrot Cake oatmeal recipe!

Couple a days ago I posted a Healthy Carrot Cake recipe , so now come the same recipe but in a oatmeal form! Because carrot cake is way to good to eat it only when we bake it, so if you want to taste this special flavor in your oatmeal this is the recipe for you! A big bowl of warm oatmeal and with the same flavor as a carrot cake? So good! Let’s see the recipe:

Ingridients:

-For one serving-

-40 or 50gr oats

-250ml milk

-1 tsp cinammon (if you don’t want a strong flavor just 1/2 tsp)

-Pinch salt

-1/2 carrot

-Handfull crashed walnuts

-1/2 vegan butter or margarine (you can use butter as well)

-2 tbsp brown sugar

Topping:

-A couple crashed walnuts

-A bit cinammon

Instructions:

Put in a small saucepan at medium heat the milk and the oats and stir well until it starts to thicken, then put the other ingridients (except the ingridients for the topping). Mix good until are well combined, then put the oatmeal in a cereal bowl and top with the crashed walnuts and a bit of cinammon. Let it cool just for 2-3 min to not burn your tongue haha. And of course, enjoy!

Cinammon Roll Oatmeal recipe!

Since I lerned to make good oatmeal I can’t stop eating it! Is always so good to eat something warm in these cold mornings…And as I’m always reaaaally hungry in the morning this is a good option to satisfy me. But now stop “talking” about me and let’s start “talking” about the recipe! This recipe is perfect for the cinammon lovers, more specifically for the cinammon roll lovers! So, if you have time in the morning and you love cinammon try this recipe;

Ingridients:

For the oatmeal

-1/2 cup oats (40-50gr)

-1 cup milk (250ml)

-1,5 tbsp brown sugar

-1/2  tbsp white sugar

-pinch salt

-pinch cinammon

For the topping

-1,5 tbsp brown sugar (this tastes waay better with brown sugar)

-1 tsp. melted butter (for a healthier option, vegan butter or margarine)

-1 tsp cinammon

Instructions:

Oatmeal:

1-In a small saucepan add milk, sugars, salt and cinammon and bring it to boil over medium heat.

2-Add in the oats, then stir until the oatmeal begins to thicken (3-5 minutes)

3-Remove from the heat and put it in a cereal bowl, let it sit for 3 minutes.

Topping:

In a small bowl combine the melted butter, brown sugar and cinammon until is well combined. Then top the oatmela with it.

Healthy Pop Tarts recipe!

Mmmm so good! I have to say, these are really amazing! It just taste reaally good, and are so easy to make! An healthy too! Just the perfect recipe; easy, yummy, fast and healthy! So yes, no words needed. Let’s start with the recipe!

Ingridients:

-100gr flour

-pinch salt

-35gr honey or maple syrup

-2-3 drops vanilla extract

-20gr veg oil or coconut oil

-A bit of milk

Instructions:

Preheat oven to 350F° or 170180 degrees. Mix in a bowl the dry ingridients and in another one the other ingridients. Mix then all the ingridients, you will have at this point a crumbly dough so put milk until your dough is workable.Let it chill for 20 min and then roll the dough, make sure is not too thick or too thin. Then put the filling (some filling ideas below) and then place remaining rectangles on top. Bake for 14-18 minutes or until the sides are golden-brown. Let them cool a bit and enjoy!

Filling ideas:

-Jam, cookie spread, chocolate chips, apple mixed with brown sugar, brown sugar mixed with cinammon, nutella, p&b…
